    VANILLA CAKE

      Step 1: 🔥 Preheat and Prepare

      • - Preheat your oven to 170ºC/340ºF (conventional oven).
      • - Line a 3x20 cm (8-inch) baking pan with parchment paper.

      Step 2: 🍰 Sift and Set Aside

      • - In a bowl, sift together 260g of all-purpose flour, 1 tablespoon of cornstarch, ½ teaspoon of baking powder, ½ teaspoon of baking soda, and ½ teaspoon of salt.

      Step 3: 🧈 Cream Butter and Sugar

      • - In a large bowl, beat 135g of butter and 225g of granulated sugar on high speed for about 3 minutes.

      Step 4: 🥚 Add Eggs and Flour

      • - Add 3 large eggs, one at a time, and mix until well combined.
      • - Gradually add the sifted flour mixture and mix on low speed until just combined.

      Step 5: 🌟 Add Remaining Ingredients

      • - Add 180g of sour cream, 45g of vegetable oil, 1 teaspoon of vanilla extract, and 1 ½ teaspoons of vanilla bean paste.
      • - Mix until just combined. Be careful not to overmix.

      • - Divide the batter into three prepared baking pans and level it.
      • - Bake for 13-15 minutes or until a cake tester comes out clean.
      • - Let the cakes cool completely.

      MASCARPONE CREAM

        • - Cream together 300g of mascarpone cheese, 20g of acacia honey, and 1 teaspoon of vanilla bean paste.
        • - Add 150g of powdered sugar and mix until smooth.

        • - Add 180g of heavy cream and whip until stiff peaks form.
        • - Refrigerate until ready to use.

        ASSEMBLING

          Step 10: 🍓 Prepare the Berries

          • - Clean and slice 600g of strawberries, blackberries, and raspberries.
